However, you can at least avoid that attack you CAN't get around Mimosa's because that's the fight's finale. I can see this being intended because she's a boss for example, if you get hit by Rekka's grapple attack, the clock keeps running through the whole animation. I haven't gotten past floor 40, but this was the ONLY example I can find of the clock not stopping when starting these types of attack sequences. she has TWO parry sequences before you defeat her, meaning if the clock isn't high enough when she starts the attack, you will just die and there's nothing you can do about it even if you nail all the parries. if you miss any parries, she repeats the sequence, but it wastes about 5-10 seconds before she starts the sequence again. When fighting Mimosa on Floor 40, she launches into a similar sequence at the end of the fight, but it does not stop the clock at all. Something inconsistent I just noticed when doing Rhythm Tower: Enemies that force you into the "parry sequence" attacks (like the Samurai haiku attack) typically stop the clock during these sequences.
